Seasons are a Changing and We Need Soup!

 

Diet is such an important way  to nourish our organs and vital systems and soups are particularly powerful healing foods. Why?  Soups are nourishing to the Spleen and the Spleen loves warm, cooked foods to generate the Qi energy we need to function well.

The seasons are changing, and this is the time according to Traditional Chinese Medicine, when extra care is needed to keep your body’s immune system strong and healthy.  This soup recipe is warming and cleansing for the Liver and Large Intestine.  It’s also so simple to make it’s ridiculous!  Really, cooking can’t get much easier than this!

So here is my Change of Season Soup Recipe!

What you need:

  • 1 large broccoli
  • 1 large cauliflower
  • 1 brown onion or a leek,
  • 2 garlic cloves
  • 1 litre homemade chicken or vegetable stock (or bought if you don’t have time to make your own)
  • salt, pepper and parsley to taste

Preparation:

  • Lightly fry the chopped garlic and onion in a little ghee or oil until soft (in a large pot)
  • Chop all the vegetables and add to the pot with the stock and any extra water to cover the veges
  • Pop the lid on and cook until the broccoli and cauliflower are tender
  • The broccoli should be green but tender.
  • Blitz the vegetables with a hand blender (bamix style)
  • Add salt and pepper to your liking, or tamari if you prefer.
  • Serve with greek yogurt mixed with a large handful of chopped italian parsley.  This makes it nice and creamy!
