• ½ cup brown rice or millet
  • 1 apple or pear chopped up
  • 1tbsn flaked or shredded coconut
  • ½ cup non dairy milk
  • Handful of sultanas or cranberries
  • Handful of chopped nuts
  • ½  tspn vanilla extract
  • 1 tspn honey, rice or maple syrup (optional)

Method

  1. Put ½ cup brown rice or millet in a pot with 1.5 cups cold water.
  2. Bring to the boil then simmer on low heat for 10 minutes  with lid ½ open.
  3. Add fruit, coconut, dried fruit and milk.
  4. Simmer until the rice is cooked through and the fruit is soft.
  5. Add more water or milk (if needed).
  6. Add sweetener (if needed).
  7. Need protein? Add 1 egg at the end of cooking and stir through.
  8. Serve topped with nuts
