• 1 onion
  • 1 sweet potato
  • 1 zucchini
  • 1 potato
  • 1 carrot
  • ½ head broccoli
  • ½ cup peas
  • Herbs of your choice
  • Miso, tamari or soya sauce.
  • lemon

 

Place onion, potato, sweet potato and carrot. Cover with water and simmer until potatoes are soft. Add peas and broccoli and zucchini and cook for another few minutes until just tender. Take a little of the water and mix it with 1 tablespoon miso. Pour over the vegetables and stir. Alternatively, omit miso and add tamari or soya sauce. Serve with any chopped herbs and a squeeze of lemon.
