- ½ cup brown rice or millet
- 1 apple or pear chopped up
- 1tbsn flaked or shredded coconut
- ½ cup non dairy milk
- Handful of sultanas or cranberries
- Handful of chopped nuts
- ½ tspn vanilla extract
- 1 tspn honey, rice or maple syrup (optional)
Method
- Put ½ cup brown rice or millet in a pot with 1.5 cups cold water.
- Bring to the boil then simmer on low heat for 10 minutes with lid ½ open.
- Add fruit, coconut, dried fruit and milk.
- Simmer until the rice is cooked through and the fruit is soft.
- Add more water or milk (if needed).
- Add sweetener (if needed).
- Need protein? Add 1 egg at the end of cooking and stir through.
- Serve topped with nuts
