An earth warming, protein rich stew to nourish your Spleen and Stomach. Serves 4

Ingredients

  • 1 cup red lentils washed well
  • 1 onion
  • 1 cup chopped butternut pumpkin
  • 1-2 cloves garlic
  • 2cm ginger
  • 1 tspn garam marsala powder
  • 1/2 tspn tumeric
  • 1tspn cumin
  • 1 tblspn coriander powder
  • handful of curry leaves (fresh or dried)
  • 200mls of coconut milk
  • 1 tspn ghee or olive oil

Method

Cover the lentils with water and bring to the boil. Simmer for 5 minutes then rinse and strain. Cover with water and bring to the boil again, then simmer until lentils are soft.

Meanwhile, in a small fry pan, heat up ghee or oil, add onion, ginger and garlic and fry until soft and slightly caramelised. Add spices including curry leaves and fry until fragrant.

Add spice mix, pumpkin and coconut milk to lentils, season as needed and simmer until you are happy with texture and taste.

Serve with yoghurt, cucumber and chilli if desired.
